Vinification of grapes coming mainly from different vineyards of Nebbiolo da Barolo and Nebbiolo da Barbaresco. Alcoholic fermentation lasts about 3-4 weeks at a temperature of 28°-32°C. Malolactic fermentation follows in steel and/or barrels. All the vineyards are vinified and aged separately, until the lots to be used that year for the Langhe Nebbiolo and those to be further aged for the Barolo Castiglione are selected. Aging: after malolactic fermentation, aging continues in wood (barrels and large casks) for about 18/20 months, after which it is assembled in steel for bottling.
