Vallegarcía Viognier is a white wine from the D.O. V.T. Castilla produced by the Pago Vallegarcía winery. Vallegarcía Viognier is, as its name suggests, a single varietal Viognier. The grapes come from vineyards planted at 850m altitude in the Montes de Toledo, in the area of influence of the Cabañeros National Park. For its production, the must undergoes a pre-fermentation maceration at 8ºC. Subsequently, 80% of the fermentation is carried out in tanks at 15ºC and the remaining 20% in barrels, where the wine is aged on its lees for 6 months. Finally, before its commercialization, Vallegarcía Viognier will rest for 1 month in the bottle to finish refining.
