The vineyards of our estate "La Lobera" have an alluvial soil, with the characteristic boulder, excellent structure, porosity and drainage, which provides a suitable support and microclimate for an exceptional development of this variety. Sauvignon Blanc is a variety that adapts perfectly to the climate and soil conditions of the Rueda D.O. area, allowing the production of wines with great aromatic intensity, good acid balance and minerality. After a period of cold maceration and after the extraction and clarification of the must, the slow fermentation is carried out at a controlled temperature of between 13ºC and 15ºC, to protect the primary aromas so peculiar to this variety. Once fermentation is complete, the wine remains in contact with its fine lees, with the intention of increasing the sensation of volume in the mouth and improving its longevity.
Our objective is to allow Sauvignon Blanc to show all its "character" in a continental climate zone with poor soil. To this end, from the work carried out in the field to all the winery's winemaking processes, we strive not to mask the uniqueness of this variety, allowing us to highlight its characteristic primary aromas and minerality.
