Description

Elena, a designer by profession, was born into a family of winemakers. However, she did not realize her dream of setting up her own winery until years later, when professional success provided her with the means to embark on the Valdaya project. The beginnings were tough, but a change of mentality in 2013 led them to become a leading winery in the Ribera del Duero DO. Therefore, Marta Ramas and Miguel Fisac, a young winemaking couple, decided to return to their land after having worked in different parts of the world and implement in Valdaya a new way of working, replacing volume and mechanization with microfermentations and artisanal methods. The results were not long in coming, with limited and high quality productions. As Miriam González, daughter and current director of the project, explains, "totally committed to the territory, our philosophy is to let each small terroir express its potential".
Valdaya Mirum comes from plots of old vines planted in low-yielding goblet-trained vines, vinified separately, our philosophy is to let each terroir express its potential. In the winery, each plot is vinified separately. The "flor" wine from each plot is transferred to a selection of new barrels according to its aging potential and organoleptic characteristics, where it undergoes malolactic fermentation and subsequent aging for 18 months.
