A wine made in the most natural way possible, without the addition of correctors or yeasts, seeking to preserve the floral and fruity aromas typical of Tempranillo. El Valiente 2018 is a smooth, slightly astringent and very elegant red wine. The liveliness and freshness that Bodegas Valdaya wines usually display are striking.
El Valiente 2018 comes from two estates located in the municipalities of Gumiel de Mercado and Baños de Valdearados (Burgos), with vineyards between 30 and 50 years old. Both plots have deep clay soil, which allows them to retain moisture in the soil even during dry periods. In addition, the estates are oriented to the northwest and at an altitude of 850 to 900 meters, which allows us to obtain an elegant wine, with freshness and acidity, medium concentration and very fruity.
In the winery, the grapes are destemmed and placed in small stainless steel and concrete tanks to carry out the alcoholic fermentation and control the extraction through slow and gentle infusions to achieve a smooth wine without astringency. Once the alcoholic fermentation is complete, the wine is transferred to 500-liter barrels of fine-grade, lightly toasted French oak, where it undergoes malolactic fermentation and aging for 12 months.
