Grapes overripe in the vineyard until semi-passage and high sugar concentration. Manual harvesting of the grapes in 12kg boxes and selection in the vineyard. Subsequent gentle destemming keeping the berries intact and light pressing with carbon dioxide gas. Static racking in isothermal tanks and fermentation in 500l French oak barrels at controlled temperature for approximately two months. Straw yellow with golden reflections, clean and bright. Aromas of peach in syrup, pineapple and honey stand out, accompanied by intense hints of pastry and empyreumatic notes. Wide and enveloping on the palate, where sweetness and tenacity are perfectly combined. Long and persistent with hints of dried apricots in retronalsal. Ideal for pairing with desserts and appetizers. Serving temperature 8-10 C
