In 2013 we started with the first plantings of vines. Today nine different grape varieties thrive on an area of seven hectares. From the beginning, our ambition has been to apply natural cultivation methods: both in the cultivation and in the aging of the wines. We renounce the use of chemical products in the crops and we carry out a laborious manual care of the land. On the other hand, the winery is committed to winemaking with the latest technology in order to control and direct the various winemaking processes. In the winery we mainly use French and American oak barrels for aging. Our goal is to produce wines of superior quality and natural, with a typical Mallorcan touch. Above all our main requirement is to achieve the highest quality in our wines. Our Cuvee No. 2 is the result of soft pressing and short cold maceration, fermentation at controlled temperature in stainless steel tanks and 24 months of aging in French oak barrels. Our Syrah is subjected to a short cold maceration and soft pressing, then fermented at controlled temperature in stainless steel tanks and aged for 24 months in French oak barrels.
