Maison Simonnet-Febvre, is a traditional winery in Chablis and one of the oldest in the area, since its founding in 1840, they produce a wide variety of wines from different terroirs of the Chablis and Grand Auxerrais region, from Petit Chablis to Chablis Gran Cru. The Petit Chablis is made from a single variety: Chardonnay, under the Apellation Village, the average age of the vines is between 15 and 20 years, coming from the highest area in soils composed of Jurassic Portland marl with a high percentage of limestone. Vinified in stainless steel tanks and aged in the same tanks for 6 to 8 months on its fine lees. The wine is not aged in oak, which brings out the full potential of the fruit. It denotes a great freshness, mineral bouquet, crisp, floral and fruity aromas of pear, peaches and melon, light citrus character. Light to medium bodied, very smooth and fine. An excellent value for money wine for Chardonnay lovers, made from vines between 20 and 25 years old, grown on clay-limestone soils. Aged for 6 to 8 months on its lees in stainless steel tanks, then rested in rhyme for 1 to 4 years.

Description

Located in the peripheral zone of the Chablis appellation, it is characterized by very calcareous portlandian soils with a thin layer of topsoil, in higher parts, stony areas with fairly light soils and on plateaus that are victims of erosion.
