Luxurious medium-bodied red made from grapes grown in a unique plot near Martinborough in the Wairarapa Valley, organically farmed and hand harvested. 100% Pinot Noir (Dijon clones). Destemmed and cold macerated. Fermented in stainless steel tanks and aged for 18 months in French oak barrels (45% new and 55% used). Deep garnet color. Aroma of black cherry and plum, with notes of thyme, licorice and black pepper. Ripe cherry flavor on the palate with notes of vanilla, pomegranate and spice. A wine with a lot of complexity, structured but round, with notes of cocoa and spices highlighted by its aging. Long finish. Optimum consumption: 2024 to 2030.
Black cherries and roasted plums unfold in the glass, moving into wild thyme and violets with impressions of cassis, sandalwood and cinnamon. A complex wine with a firm tannic structure, but soft on the palate. The secondary role of oak intensifies the underlying black cocoa and spicy characters.
