In the midst of the rosé revolution, increasingly complex, we seek to produce a gastronomic wine that shows the uniqueness of the ancestral Mallorcan variety Gargollassa. This wine is the result of more than a decade of experimentation and much effort to recover an autochthonous variety, which inexplicably was on the verge of extinction. The last year in which Gargollassa appeared in the inventory of authorized varieties was 1979, shortly after which it disappeared from the wine-growing scene, probably due to its low yield and, therefore, little interest in planting it. Years later, at the end of the 1990s, when the main attraction of a variety was the quality of the wine produced and not the quantity of grapes, the recovery of Gargollassa created great expectation and the search began for plants that might have been left in unclassified estates. In 1998, Bodega Ribas managed to locate the only 3 specimens remaining on the island and, after years of experimentation and multiplication, presented this variety of singular character and great individual potential. This pre-phylloxera variety, a descendant of the Heben and Monastrell varieties, has come to remind many of a Pinot Noir for its delicate and elegant nuances. The grapes are harvested by hand in our own vineyards. The grapes are then passed through a selection table where a strict quality control is carried out. Gentle pressing of the clusters at low pressures in a pneumatic press to avoid oxidation. Long fermentation in stainless steel tanks at low temperatures of about 14ºC for about 40 days to preserve the subtlety of the varietal aromas.
This attractive organic rosé is the newest member of Bodega Ribas' fantastic Sió family. Made at 100% from Gorgollassa, which was almost completely extinct until a focused project around 2000 brought it back as one of the exciting local Mallorcan grapes. These are, of course, like the rest of Bodega Ribas wines, hand harvested and hand selected grape by grape.
