A white wine made from old-vine Prensal, Giró ros and Viognier aged in barrels. We look for complexity and length. The Prensal variety is characterized by its delicacy on the nose when the vines are young, but only old vines can provide the structure and length necessary for aging. In addition to the age of the vines, the work in the vineyard is fundamental; production must be very limited and ripening must be strictly controlled to avoid over-ripening and to maintain the correct acidity to allow long aging in barrels and bottles. Harvest by hand. Strict selection and gentle pressing of the clusters at low pressures in a pneumatic press to avoid oxidation. Partially fermented and aged for 5 months on its lees in French oak barrels.
Sió Blanc represents our commitment to seek complexity in a white wine. It is made from Prensal Blanc, a fresh Mallorcan variety with delicate aromas, together with Viognier, an atypical and recently discovered variety that provides that acidic and structured touch that rounds the wine. The result is a fresh, tasty wine, rich in nuances.
