De la Finca 2019 is Raventós i Blanc's most emblematic sparkling wine and the first to be made at this winery. It comes from one of the property's historic vineyards, Vinya dels Fóssils, planted in goblet in 1964. The 2019 vintage was excellent, with a longer cycle and slow ripening that facilitated a good synthesis of aromas. The final blend was 60% of xarel-lo, 25% of macabeo and 15% of parellada. A complex sparkling wine on the nose, with aromas of baked apple, toasted nuts, honey and aniseed notes. The palate is elegant, with fine bubbles that give it creaminess and a fresh, slightly saline finish. It goes very well with cured meats such as Iberian ham.
