Protos'27 is a tribute to the 11 visionaries who founded Protos. A wine that reflects 10 years of work and research in the improvement of cultivation techniques, characterization of vineyards and barrels and the use of indigenous yeasts.
Protos 27 is a Protos wine, a tribute to its first vintage marketed in 1927 and made exclusively from Tinta del País grapes. Protos, the first winery to settle in Ribera del Duero, has had from the beginning the objective of making quality wines, for example, limiting yields to achieve very balanced grapes, or controlling and planning the harvest according to the particularities of each of its plots. The vineyard from which the grapes for Protos 27 are harvested is more than 50 years old. To vinify Protos 27, the grapes were harvested by hand in order to make a first selection of the bunches in the field, and 20 kg crates were used to treat the grapes as best as possible. Subsequently, the grapes were kept in cold storage to preserve their aromas and enhance the fruit in the final wine. Before vatting the grapes, a second selection of bunches was made on the sorting table. Fermentation took place at 25 ºC in 15,000-liter tanks, followed by malolactic fermentation in new French oak barrels. Finally, the wine aged for 16 months in these barrels and spent a year in bottle for final refinement before release. Protos 27 is a classic, complex and harmonious Ribera del Duero wine.
