Pago de Carraovejas is one of the best known wines of the D.O. Ribera del Duero produced by Bodega Pago de Carraovejas. It is a blend of Tinto Fino (91%), Cabernet Sauvignon (6%) and Merlot (3%). The grapes are grown on an estate owned by the winery, the estates are spread throughout Ribero del Duero and the grapes are grown under the careful supervision of the winery's technical team. The Carraovejas estate is located on the outskirts of Peñafiel, one of the towns with the longest winemaking tradition in Ribera del Duero, composed of calcareous clay soils with red marl.
Oceanic climate with low rainfall, very cold in the long and wet winter falling to temperatures of -10ºC. Summers are short and very hot, reaching temperatures of 40ºC, however nights and mornings are cool. Harvesting is done by hand and the grapes are transported in small stainless steel vibrating trailers, arriving at the winery destemmed, whole and unharmed. Pago de Carraovejas undergoes fermentation in small stainless steel tanks and French oak vats with indigenous yeasts from its own vineyards. It is aged for 12 months in new and semi-new (3 years) French and American fine grain oak barrels, clarified with natural egg white and bottled by gravity. It rests for 12 months in bottle before release.
