With this wine the winery wanted to explore combining grapes of French origin, such as Syrah or Cabernet sauvignon, with native Balearic varieties such as Callet or Manto negro. This has resulted in a structured and balanced wine, with lots of fruit and great aging potential. The French varieties are fermented at 27 degrees and the Mallorcan varieties at 25 degrees. The wine is aged for 12 months in French oak barrels and before bottling, it is naturally clarified by cold.
The OM500 represents 500 years of family tradition through a perfect combination of the authenticity and finesse of the Mallorcan varieties, and the structure and potential of the French varieties.
