Numanthia is the most emblematic wine of Bodega Numanthia, and is considered one of the great wines of the D.O. Toro. Numanthia takes its name from Numancia, a city famous for its resistance to an epic attack by the Roman army. The citizens defended the city to the end, preferring death to surrender. Drawing a parallel with history, the vines of Numanthia have withstood the extreme climate for almost 100 years and have been able to overcome some "bloody" episodes, such as the phylloxera epidemic of the 19th century. Numanthia is a single varietal Tinta de Toro, the reigning variety in the Toro DO. It is made from grapes grown in old vines about 100 years old, different plots around the Duero River at an altitude of about 700 meters above sea level. The vines have low yields, but this makes for very concentrated grapes. They withstand the extreme climate with a temperature difference between day and night, between winter and summer. The result is wines with strength and intensity. Numantinos. Harvesting is done by hand when the grapes have reached their optimum ripeness. After a rigorous selection in the vineyard, the grapes are transported to the winery in small boxes to preserve them in perfect conditions. Once in the winery, the grapes are crushed using traditional methods. The entire production process is handcrafted. Fermentation takes place during 9 days at a controlled temperature between 26 and 28 ºC, with two daily pumping-overs. After fermentation, maceration with the skins is carried out for 25 days, with gentle stirring. Numanthia is aged for 18 months in new French oak Bordeaux barrels that favor the good structure and balance of the wine. The wine is racked every four months. Numanthia is a wine of intense and complex character but very balanced with a smooth, silky and elegant texture. A search for excellence that is captured in each bottle.
