The white wine Memòries de Biniagual Blanc, from the Biniagual winery in Mallorca, has the Binissalem Denomination of Origin (Mallorca), and is harvested in small boxes of 10 to 12 kg. The grapes are manually selected and undergo a cold maceration in a carbonic atmosphere. It is then gently pressed with carbonic protection at low temperature before being fermented at a controlled temperature of 17 degrees and aged on its lees for about 4 months in stainless steel tanks of 4,600 liters, for subsequent stabilization.
Citrus, white flowers and a touch of brioche from the lees work. It is dry, with a very well integrated high acidity, citrus notes of lemon and white flower along with a creamy touch from the lees work.
