Vintae Wine Company surprises us again with La Jefe, its first white wine for aging, which, of course, enters with force to occupy its own role in this great family of the D.O. Toro (Castilla y León). A project that came from the hand of the technical director of Vintae, Raúl Acha and the general manager of the company, Richi Arambarri in 2005 to pay tribute to all the winegrowers who, generation after generation, have worked the vineyard with effort and dedication and where, of course, could not miss the woman of the Toresano vineyard; the real head of the family. La Jefa is a white wine made mainly with the Castilian Malvasia variety from centenary and pre-phylloxera vineyards, accompanied by a small proportion of other white varieties aged between 50 and 150 years. Old vines of low production settled in poor sandy soils with a high component of granitic stones and which are cultivated respecting the winemaking tradition of the Toresano region. Once the grapes are in optimal conditions, the grapes are harvested by hand and transported in boxes and small trailers. Then in the winery, after macerating with the skins for 4 hours, the grapes are gently pressed with static racking. The must obtained ferments spontaneously with indigenous yeasts in new 600-liter French oak barrels. Finally, the wine rests on its lees in these same barrels for 14 months.
