Mar de Frades is a single varietal Albariño white wine made in the Rías Baixas DO by the winery of the same name, Mar de Frades. The grapes used for the production of this Albariño come from Finca Valiñas, a terraced vineyard located to the south of the Valiñas mountain, in the Salnés Valley. The influence of the nearby Ría de Arousa and its sea breezes is noticeable, giving this Mar de Frades a saline character. The vines are more than 20 years old, trained to avoid soil humidity. The soil is poor and shallow, formed by granite decomposition sands that transmit a certain minerality to the wine. Harvesting is done by hand and the grapes go through a strict selection process on the table, where up to 20-25% of the harvest can be discarded. The grapes are macerated for 10 to 20 hours and after a light pressing a clean and very aromatic must is obtained. Fermentation is carried out slowly at a controlled temperature.
