For Maisulan El Hondón, Luis and Eva follow certain Fukuoka principles. The vineyard is also certified organic. The grapes are harvested by hand, destemmed and fermented at low temperature with their own yeasts. Maceration lasts about 15 days, depending on the vintage. The wine then rests in 225-liter French barrels for 8 months.
