Domaine Louis Michel et Fils works with 21 hectares of vineyards, many of them Premier and Grand Cru. This generous and intense Grand Cru Chablis uses grapes from the Vaudesir vineyard, located at the bottom of the slopes. The wines produced from this site are tight, with a tension between wonderful salinity, full body and ample textural creaminess. The grapes are harvested by hand and picked in small crates to avoid splitting. Fermentation at controlled low temperatures in stainless steel to preserve aromatic freshness. No oak is used at all in the winemaking, and the producer relies entirely on modest yields to produce the concentration and intensity of character for which Louis Michel wines are known. Each tank is left in contact with the lees to add complexity before natural cold decanting, racking, blending and bottling. A colossally pleasing wine, Grand Cru Vaudesir reveals aromatic notes of rhubarb and acacia flower. The palate is fine and elegant, with aromas of butter, brioche and a suggestion of coconut. Try it with seafood and crustacean dishes, grilled asparagus and salmon, Thai green curry, brie cheese or cured goat or cheddar cheeses.
The Louis Michel & Fils parcel is located in the lower part of the valley. The wines produced from these vineyards are tight, with wonderful salinity and full body, and are even creamy on the palate.
