After harvesting, the grapes are immediately taken to the winery. There they are carefully sorted and crushed. Fermentation takes place in stainless steel tanks at controlled temperatures. Vinification is followed by maturation on fine lees for several months before final extraction of the wine. This French white wine is best enjoyed moderately chilled, at 11 - 13°C (52 - 55°F). It is perfect as an accompaniment to pasta with sausage meatballs, cabbage roulades or chickpea curry.
