Louis Latour Chablis is a single varietal Chardonnay white wine produced by Louis Latour in Chablis, Burgundy. It is a winery with more than two centuries of history. Eleven generations have been at the helm. The winery owns about 50 hectares. Louis Latour also acts as a negociant, that is, it buys and vinifies grapes from third parties. The winery even has its own cooperage and produces about 3,000 barrels a year. The Louis Latour Chablis vineyards have an average age of 30 years and their soils are limestone from the end of the Jurassic. The average production per hectare is 45 hl, and the grapes are harvested mechanically. This Chablis is made in the traditional way in stainless steel tanks at controlled temperatures. The wine also undergoes malolactic fermentation to make it creamier and less acidic. Finally, the wine remains in steel tanks for about 8 to 10 months. It is a pleasant, fruity and creamy Chardonnay, with a persistent and enveloping finish.
