José Pariente Sauvignon Blanc is a single varietal wine made from Sauvignon Blanc grapes. The D.O. Rueda is an appellation known for the Verdejo variety, although José Pariente demonstrates with this wine that excellent wines can also be made from other varieties in this appellation. The grapes to make this white wine come from some of the first Sauvignon Blanc vineyards planted in Rueda 30 years ago, planted on a stony soil poor in organic matter, with magnesium and calcium, and limestone at the highest elevations. The soil yields a low yield, but the grapes are of high quality. The vineyards endure a harsh continental climate, with very cold winters and very dry and hot summers. The temperature contrast between day and night is very high, helping to maintain a great balance between sugar and acidity in the grapes. The grapes are harvested by hand and transported to the winery in small 20 kg boxes. The winemaking process begins with a destemming of the grapes, followed by cold maceration for about 10 hours. After maceration, the grapes are pressed by pneumatic pressing before fermentation. To extract the maximum aromas of this variety, José Pariente Sauvignon Blanc is kept on its lees until clarification and subsequent filtering. A Sauvignon Blanc in the land of Verdejos.
