The grapes are hand-picked and destemmed at 100%. Cold maceration lasts 4 to 5 days before fermentation begins. During fermentation, the temperature is kept at a maximum of 32°C to preserve the aromas of the berries. The solids that form a cap are broken down and the juice is pumped over daily, ensuring maximum extraction of color and concentration. AGEING - 5% in new oak and 10% in 1-year-old oak barrels and the other part in vats. ANNUAL PRODUCTION - av. 1300 bottles. CHARACTERISTICS - Aromas of red fruits when young evolving into candied fruits. Good tannin structure allows it to age well. SERVING TEMPERATURE - 15 to 16°C. AGING POTENTIAL - 4 to 5 years.
