Description

Vinification and aging on lees avoiding any premature oxidation. Malolactic fermentation carefully avoided to preserve the naturally fruity aroma of the wines and to guarantee their perfect conservation. The red wines of Ambonnay and Bouzy allow us to obtain a rosé with a delicate color and fruity flavor. Gross dosage (8 g/l) to maintain the balance between freshness, fruitiness and vinosity and not to mask the wine's character and purity. Aged for a minimum of 3 years in the cellar at a constant temperature, much longer than the legal minimum of fifteen months.
A soft, fluid, salmon rose petal colored liner, adorned with some ruby-cherry highlights. The nose clearly expresses strawberry, both in its fresh and jammy or stewed fruit form. The palate is structured with a constant balance between tension of freshness and roundness of fruitiness. Pulpy red fruits such as wild strawberries (cream or coulis) predominate and provide a soft and enveloping sensation. The palate is round with a pleasant freshness on the finish. It pairs well with fruit because of its tender side, a reflection of its youth. With Foie gras for the audacity and the search for fat and sweetness around the base constituted by the vinosity of the wine.
