The vineyard is located in the municipality of Llubí, in an area called "sa sierra" of limestone loam soil, called "blanquer". Very fresh land, with intense summers, ideal to look for freshness and white varieties. Composed of Malvasia de Banyalbufar (60%), Giro Ros (30%) and Manto Negro (10%) from slightly sloping vineyards. Cultivation under the parameters of Organic Agriculture with mechanical weeding (without herbicides) and organic pickling, prioritizing less aggressive preventive treatments for plants, fauna and environment. Calcareous clay soil (Blanquer), deep, poor, with good water retention and high calcium content. These soils, in warm climates, are ideal for extending the ripening cycle and obtaining fresh wines with alcohol content and good acidity. The grapes are harvested by hand in 15 kg boxes. All three varieties at the same time at the mid-point of maturity required for good acidity and freshness. 24 h in a cold room at 5 °C. Direct cold pressing to extract only the most interesting part of the grapes, light racking without leaving the must too clean and co-fermentation of the three grapes with temperature control (not too cold). After fermentation we leave the wine in contact with its lees during the winter months to stabilize the wine and gain complexity. After a light filtering, the wine is bottled.

Fentvi is the letter of introduction of a new personal project of three colleagues from Santa Eugenia who are passionate about the world of wine. A project in which we wanted to represent our ideas; respect for the environment in which we live, using grapes from organic and environmentally conscious production, passion for local varieties and creation of a different concept, making a wine of minimal intervention, with a lot of freshness and drinkability.
