Description

The winemaking team of the Queirón winery does not stop, does not settle. It reflects and searches. It dreams and materializes its ideas, navigating between innovation and the reinterpretation of tradition. What is now and what has always been. It is in this context that Ensayos Capitales Nº3 emerges, a single varietal Tempranillo from our La Pasada vineyard (on the crests of the Sierra de Yerga), rocked by the rays of the sun beyond the harvest. A new style of winemaking in Rioja that springs from the inspiration of the Queleñan tradition of raisining its plums, which are sunbathed on reeds. Sun-roasting is an ancestral practice of over-ripening grapes by direct exposure to the sun of bunches of grapes lying in the open air, which leads to partial dehydration and maintains the integrity of the berries, which develop in their concentration without rotting. In the Marco de Jerez region, sun-roasting is historically carried out by exposing the cut bunches to the sun on mats of different shapes and materials, the most classic being the use of round esparto mats.
"In Quel, we carry out the sun-roasting on old reeds that are used to raisin plums, where we spread the bunches very carefully after the manual harvest. Every day we turn them over so that the incidence of the sun's rays on the grape berries is as homogeneous as possible," Rubén emphasizes.
