Another small estate owned by Jonathan Maltus that finds its origins on the gravel plateau surrounding St Sulpice, southwest of the town of St Emilion. Green, hand-harvesting and 50-year-old vines ensure that only the healthiest, most balanced and concentrated grapes are available to the winemaker. Unlike Le Dôme, most of the plantings are Merlot, with 10% of Cabernet Franc. The land is spread over 5 hectares, so larger quantities of wine are produced per year: about 1,000 cases, which is still very little by Médoc standards. The Merlot is so deep and brooding after vinification that it needs just over a year in new oak before bottling.
