The Moreau family has been established in Chablis since 1814 and Louis is now the sixth generation. After studying oenology and viticulture at Fresno State University (California) and gaining experience in different wine domains in California, Louis returned to Chablis to succeed his father. He now produces and markets exceptional wines with an international reputation. Initially the Chablis parcels located in Chablis are harvested, the Beines parcels need a few more days to reach optimum ripeness before harvesting. Once the juices are in stainless steel tanks, they first undergo 100% activated alcoholic fermentation with natural yeasts for 15-18 days at low temperature (18°C) and then a 100% malolactic fermentation thanks to natural bacteria at 20°C for a few months. After racking to remove the gross lees, the wine is aged in tank on fine lees for at least 4 months with weekly pumping over. It is then clarified before being cold filtered and bottled. This last part is done tank by tank, as soon as the bottles are sold, with the rest of the wine remaining in tank. The Chablis de Domaine Luois Moreau is a bright golden colored white wine. On the nose it is floral with a hint of apple and pear. Depending on the vintage, its taste attack can express mineral and citrus notes, balanced by its roundness and finesse.
