In Chablis, in the heart of Burgundy, the meticulous care of the winegrowers working together at the Chablisienne gives rise to wines whose magnificence is amplified with the passage of time. The story begins in 1923, when several winegrowers team up to face the economic difficulties of the time. Together, in the middle of the Chablis vineyards, they created a cooperative winery to market their wines. Until the mid-1950s, the members of the cooperative delivered their production to La Chablisienne, which was responsible for creating the blends and selling them, mainly to wholesalers.
However, La Chablisienne wanted to go much further and create its own style. So it was decided that the harvest would be delivered in the form of musts (unfermented juice), a particularity that has become the hallmark of the house and which gives it total control over the winemaking processes. There is a constant exchange of information between the winegrowers and the technicians, which links the quality of the musts to the plots from which the grapes come, thus guaranteeing the best possible technical guidance.
The Chablis appellation is the largest of the Chablis vineyards. Grown on the hillsides on both sides of the Serein River, Chablis wines are the expression of a terroir that combines freshness, minerality, finesse and complexity. Each cuvée is different: some can be tasted young, for their thirst-quenching freshness; other specific cuvées age between three and eight years, and are characterized by greater complexity, minerality and aromatic richness.
Chablis La Sereine de Chablisienne is made from vines with an average age of 30 years. Vinification is done with cold sedimentation before fermentation; alcoholic and malolactic fermentation in stainless steel tanks. Aging is approximately 12 months on fine lees in stainless steel tanks and barrels. It is a full-bodied and aromatic white wine with a pale yellow color, clear and bright with light bronze reflections. The nose is expressive with citrus notes. Some brioche aromas appear after aeration. The attack on the palate is energetic and fresh. Rich and sweet, with a structure that adds character and length. A precise and open Chablis with great aging potential.
