This wine comes from the oldest area of the Sauvignon Blanc vineyard, the plot located in Finca La Dehesa, the vineyard that Bodegas Castelo de Medina owns next to its facilities in the town of Villaverde de Medina (Valladolid). It is characterized by shallow sandy loam soils poor in organic matter, with good drainage. The vineyard from which this wine comes from has a yield of 5000 kg per hectare. 35 hectares of Sauvignon Blanc variety with an age of 30 years. Exhaustive selection of grapes after a manual harvest. In the winery, the grapes are pampered after maceration, with gentle pressing and temperature-controlled fermentation carried out with indigenous yeasts. The wine is then aged for 9 months on its lees in stainless steel tanks. The wine is aged in the bottle for about 3 months.
100% Sauvignon Blanc wine made with selected grapes from our Finca de la Dehesa estate. 9 months of aging on lees give it an unctuous and structured mouthfeel that differentiates it from the usual style of vinification of this French grape in the rest of the Rueda D.O.
